I share with you a Bonfiglio tradition, what we call
“Nanny’s Pistachio Cake.” I have carried on grandma’s recipe every Christmas but I promise you, it tastes delicious all year ‘round.
Cake Ingredients:
One box yellow or white cake mix
One package instant pistachio pudding mix
½ tsp. almond extract
Four eggs
One and ¼ cups water
¼ cups vegetable oil
Seven drops green food coloring
Frosting Ingredients:
One package instant pistachio pudding mix
One pint light whipping cream
Directions:
Preheat oven to 350 degrees F.
Mix all cake ingredients together and pour into greased cake pan.
Bake for 55 minutes.
Make frosting by pouring pudding mix in bowl and slowly stirring in cream as needed until it is a frosting consistency.
Let cake cool before icing.
