A friend and I ate these incredible quesadillas at a restaurant and decided to attempt to make them ourselves. So here’s:

How many people are you making this for?
This is for two.
Chicken [as much as you prefer]
Monterey Jack Cheese
Crumbled Bleu Cheese
Slice up the chicken and cook it in a skillet with olive oil. While the chicken is cooking, prepare the quesadillas. Shred the cheese, or buy pre-shredded cheese, and scatter it on one tortilla. Mix ranch with chipotle seasoning and pour it over the cheese. Place the pineapples on the dressing and sprinkle bleu cheese around. When the chicken is done cooking, put it on the quesadilla and place another tortilla on top of everything. Place the quesadilla on the skillet and carefully flip it when one side is brownish. After it’s cooked, slice into four parts and eat.
