Copy Desk Cookoff: Year-Round Snowball Cookies!

Unlike snow in the state of New York, snow ball cookies are a treat that you can enjoy year round. That’s why whenever I have a serious craving for something sweet, I break out the coconut and confectioners sugar and go to town. I do have to warn you though, one will not be enough to satiate your cravings, but I’m sure once you’ve eaten the entire batch, you’ll understand what I mean.

Ingredients:

One cup butter

½ cup confectioners’ sugar

¼ teaspoon salt

One teaspoon vanilla extract

½ all purpose flour

One cup coconut shavings

Additional 1/3 confectioners’ sugar for dusting (this is what will make it look like a snowball!)

Preheat oven to 350 degrees F (175 degrees C).

Cream the butter with 1/2 cup of the confectioners’ sugar and the vanilla. Mix in the flour, coconut shavings and salt. Roll about one tablespoon or so of dough into balls and place on an ungreased cookie sheet.

Bake in preheated oven until bottoms are golden (about 15 minutes). While cookies are still hot, put them in a bag with confectioners’ sugar and shake. Allow to cool and dig in!
