Sniffles, Be Gone: A Soup

With the holiday season upon us, there are a number of things to look forward to. However, getting stuck in bed with a cold is not one of them. The colder weather is sure to bring on some unwanted sniffles, so the best defense against being sick is definitely a nice, hearty chicken noodle soup. 

Ingredients:

1 tablespoon butter

1/2 cup chopped onion

1/2 cup chopped celery

4 cans of chicken broth  

1 can of vegetable broth

1/2 lb chopped cooked chicken 

1 1/2 cup egg noodles

1 cup sliced carrots

1/2 teaspoon of dried basil

1/2 teaspoon of dried oregano

1/4 teaspoon of fresh ground pepper

1 bay leaf

In a large pot, melt the butter over medium heat. 

Season the chicken with a dash of ground pepper, dried basil and dried oregano

Cook the onion and celery in the melted butter for about 5 minutes or until tender

Stir in the chicken and vegetable broth, carrots, chicken, basil, oregano, pepper and bay leaf. Bring the pot to a boil, then let simmer for 20 minutes on medium heat. Stir in noodles and cook until noodles are tender.
